SWOT Hospitality, a leading hotel management company specializing in the development and operation of high-end hospitality properties, is looking for a F&B Cost Controller to join our team in our new project The Fiction at Marousi, ROLE FUNCTIONS Monitoring daily food and beverage costs, ensuring accurate and timely data entry across all outlets. Reviewing purchase requests, verifying specifications, quantities, and pricing before submitting them to procurement. Tracking and reconciling receiving reports, transfer slips, and outlet consumption records to maintain accurate inventory figures. Conducting routine spot checks in storerooms, kitchens, and bars to verify stock levels, usage patterns, and adherence to control procedures. Analyzing variances between actual costs and budgeted or theoretical costs, preparing initial summaries or findings for management review. Maintaining and updating recipe costing sheets and POS item mappings, ensuring pricing accuracy and alignment with current cost structures. Monitoring wastage logs, breakage reports, and promotional activities, highlighting irregularities or trends that may require managerial attention. Assisting in preparing weekly and monthly cost reports, dashboards, or key metrics for the Cost Control Manager and senior leadership. Coordinating with storekeepers, outlet managers, and the finance team to resolve discrepancies in invoices, inventory counts, or documentation. Supporting periodic stocktakes by organizing count sheets, participating in counts, and performing basic reconciliations afterward. Ensuring compliance with company cost control policies and procedures, helping reinforce correct processes across F&B departments. Relevant experience in procurement/purchasing or cost control within the hospitality industry. Proficient in MS Office and other relevant software. Good knowledge of the English language.
